Chicken cutlets recipe with easy kale salad. Simple, delicious, low-carb, and quick to get on the table. And, this is a great way to try fruit-infused vinegar dressing.
Chicken Cutlets Recipe
This is truly a quick-and-easy recipe. I’ll run through the basics, and then show you the printable recipe.
Either purchase the thinly-sliced chicken breasts, or cut them yourself. Be careful. Best way is to lay the boneless skinless chicken breast on a cutting board, put a plate on top, and use the plate to hold it in place as you slice horizontally to make thin cutlets.
Coat the pieces with a fine dusting of almond flour, salt and pepper (and my favorite, Longhorn Seasoning). Fry in butter till golden brown. If you’re doing a lot, just stack the cooked ones on a pan in a warm oven while you finish.
What an Easy Meal Idea:

For kale salad, wash and dry fresh kale. Tear away the leaves from the main stem and any other thick veins. Discard the stems and thick veins, and then tear the leaves into bite-size sections. Slice up a few fresh strawberries.
If you want to tenderize the kale leaves (sometimes they can be tough) you can just massage them with the oil. Seriously. Just a minute or two and you’ll see the color change to darker green and the texture will be more supple.
Toss the kale with avocado oil and fruit-flavored vinegar, and plate it. Top with strawberries and serve with the chicken cutlets.

This is so good it deserves a whole page. Fruit-infused high-quality vinegar is pure nectar, and will cause you to eat salad, even if you’re a die-hard hater.
