EASY STOVETOP CHILI
A thick meaty chili that satisfies that winter end-of-the-day hunger. There’s no real backstory on this. It’s just the recipe we kept tweaking until it tasted right. So grab the recipe and tweak! We love beef, and we really want that to be the main ingredient. But if there’s another ingredient you want to be the star player, please add more of it and enjoy.

GRAMMYE’S CHILI
2 lbs lean ground beef or turkey
1 medium sweet onion, chopped
1 large can diced tomatoes.
1 can light kidney beans
1 can dark kidney beans
1 can pinto beans
2-3 Tbsp chili powder
¼ – ½ tsp cumin
¼ – ½ tsp black pepper
¼ – ½ tsp salt
Brown the meat well and drain. Add the chopped onion and continue cooking and stirring. Add the dry spices and coat meat and onions well. Pour in the tomatoes with their liquid, and the 2 cans of kidney beans. Not the pinto beans just yet. Add them toward the end because they are softer and need less cooking time. About the last 20 minutes.
Cook 1-2 hours on low simmer.
Notes: For thick chili, drain the beans. If you want a fair amount of liquid, leave the liquid in them. It still won’t be watery.
Taste after you have stirred everything together, and add more seasoning to your liking. Sometimes I use up to 4 Tbsp of chili powder. Taste first, though. You can add, but can’t take away.
Serve topped with shredded cheddar cheese and sour cream. Accompany with cornbread or crackers.
