Easy Ground Beef Mexican Casserole
A husband-pleasing hearty meal served up with roasted peppers and onions, topped with avocado and sour cream and chips if you like.
Brown the beef, add spices and onions, stir in cheese, pour into a dish, and bake until bubbly. Couldn’t be easier. Use the meat of your choice. I don’t think you can mess this one up. Chop those onions and peppers and get them in the oven to roast while you’re making this dish.
Read over the instructions, and make the Easy Ground Beef Mexican Casserole for yourself and your family. One important detail: Make it the way you like it. If there’s a detail that’s essential, I’ll tell you. Otherwise, heat it up with more spice, throw in another ingredient, or leave out what you don’t like. (It’s your food!) Cooking should make you happy.

There’s something I use a lot, mentioned in my recipes — Longhorn seasoning. And I can’t find it anymore.
Honestly, I’ve invented my own version. It’s salt, pepper, garlic, and paprika, and a little cumin.
It’s perfect for a lot of what we make, and contains no MSG. (MSG is my Kryptonite, I guess, makes me miserable.) This seasoning blend adds a lot of flavor to meat and vegetables alike.
