Spinach-Artichoke Casserole
It’s crazy good, packed with vegetables and cheese, just salty yummy goodness on your plate.🤗
Don’t wait for the next baby shower to eat this. Serve it with supper!
Chop an onion, saute it in in butter, using a big pan (like a stir fry pan). Use a whole stick of butter (mmm – butter is just one letter away from better). Cook till it’s starting to brown a little.
Meanwhile, cook frozen spinach just till warm and squeeze all that water out. Chop up your artichokes and get all the cheese ready. Now, put everything into that big pan with the onions and butter, and stir over low heat till it’s a big gooey mess. Turn it into a casserole dish and bake till bubbly.
And… there’s something else for you:

[If you’ve been here before, you’ve already been warned. I’m a cook, but not a food blogger. Those people are beautiful. Photographs, details, nutrition, I love them. It’s hard. I’m more like your spare tire — Here if you need me, and capable, but not nearly as showy. 😄 So enjoy this, but don’t break up with your food blogger.]
